Ingredients

Eggs and filling
  • 12 large eggs Use straight-from-the-fridge eggs for consistent peeling.
  • 0.5 cup mayonnaise Creamy classic base for the yolk filling.
  • 1 tbsp Dijon mustard Adds tang and helps the filling hold a smooth texture.
  • 1 tsp apple cider vinegar Brightens the flavor.
  • 0.25 tsp smoked paprika Smoky warmth for the filling.
  • salt To taste.
  • pepper To taste.
Turkey decorations
  • 0.5 cup candy corn For the tail feathers (4 pieces pressed into the back of each egg).
  • 1 red bell pepper Cut into tiny triangles for beaks.
  • 48 candy eyes For the front of each deviled egg mound (2 per egg).

Method

Boil and peel the eggs
  1. Place the eggs in a pot and cover with cold water, ensuring they are fully submerged. Bring to a boil over high heat until bubbling is active.
  2. Cover the pot, remove from heat, and let the eggs stand for 12 minutes. Transfer to an ice bath until fully chilled, then peel.
Make the deviled filling
  1. Halve the peeled eggs lengthwise and scoop the yolks into a bowl. Mash the yolks with mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper until smooth.
  2. Pipe the filling into the egg white halves in tall mounds. Keep the mounds compact so the turkey toppings sit upright.
Add turkey decorations
  1. Press 4 candy corn pieces into the back of each egg to make tail feathers. Arrange them fanned slightly so they read like a turkey tail.
  2. Add a bell pepper beak and two candy eyes to the front of each mound. Place the eyes close together for a cute turkey face.
Chill and serve
  1. Chill the deviled eggs until serving. Serve cold for the best texture and flavor.

Notes

Pro tip: for easy peeling, make sure the eggs are fully chilled in the ice bath before handling. Store covered in the refrigerator up to 3 days; do not freeze, as the filling texture can break down. For a lower-fat option, use light mayonnaise in the yolk mixture while keeping the same flavor add-ins.
