Ingredients

Cranberry sauce base
  • 12 oz fresh cranberries
  • 0.75 cup sugar
  • 0.75 cup water
  • 0.25 cup orange juice
  • 0.25 tsp vanilla extract
  • 0.06 salt pinch
Chocolate coating and garnish
  • 3 oz dark chocolate (60-70%), chopped
  • 1 Dark chocolate shavings for garnish

Equipment

  • 1 saucepan

Method

Simmer the cranberry sauce
  1. Bring sugar, water, and orange juice to a boil in a saucepan over medium-high heat, stirring until sugar dissolves. Heat should look actively bubbling across the surface for a steady simmer.
  2. Add the fresh cranberries and reduce to a simmer, then cook 10-12 minutes until the berries burst and the sauce thickens. Look for fewer whole berries and a glossy, jammy consistency that coats the back of a spoon.
Swirl in chocolate and finish
  1. Remove from heat and stir in chopped dark chocolate, vanilla extract, and salt until fully melted and glossy. The sauce should look smooth and dark with no visible chocolate chunks.
Cool and chill
  1. Cool the cranberry sauce to room temperature before chilling. Let it rest until no longer hot to the touch, then proceed to the next step.
  2. Chill until set, about 35 minutes. It should thicken further so it holds its shape when spooned.
Serve
  1. Top with dark chocolate shavings right before serving. Serve chilled alongside turkey, or spoon over cheesecake or ice cream for a chocolatey finish.

Notes

Pro tip: for the best texture, stir the hot mixture until the chocolate is completely melted and the sauce turns uniformly glossy. Store covered in the refrigerator up to 5 days; this recipe freezes for up to 2 months (thaw overnight in the fridge). For a lighter option, use half the sugar and reduce water slightly by 1-2 tbsp so the sauce still thickens.
