Ingredients

Apple filling
  • 6 large apples
  • 0.25 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
Oat topping
  • 1.5 cup rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 cup unsalted butter melted
  • 1 vanilla ice cream for serving

Equipment

  • 1 cast iron skillet
  • 1 Dutch oven

Method

Cook the apple filling
  1. Toss the sliced large apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice, then place them in the slow cooker.
  2. Lay a double layer of paper towels under the lid to absorb excess moisture.
Make and add the oat topping
  1. Combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, and salt, then drizzle in melted unsalted butter and stir until the mixture forms clumps.
  2. Scatter the oat topping over the apples in the slow cooker, and do not stir.
Slow-cook
  1. Cook on Low for 2.5-3 hours until the apples are tender and the topping is set.
  2. For a crispier topping, transfer to an oven-safe dish and broil for 3-4 minutes.
Serve
  1. Serve the crock pot apple crisp warm with vanilla ice cream.

Notes

For the best texture, keep the topping intact—scatter it and avoid stirring so it clumps and sets. Store leftovers covered in the refrigerator for up to 4 days; reheat in the microwave or warm in the oven until heated through. Freezing is not recommended because the oat topping can soften after thawing. For a dairy-light swap, use vegan butter in the topping and serve with dairy-free vanilla ice cream if desired.
