Boil and cool the eggs
- Place 12 large eggs in a pot, cover with cold water, and bring to a boil; cover the pot and remove from heat. Let the eggs stand 12 minutes with a clear visual cue of the water having come to a boil and then being turned off.
- Chill the eggs in an ice bath for 10 minutes. The visual cue is the eggs feeling cold and firm before peeling and halving lengthwise.
- Peel the eggs and halve them lengthwise. Keep the yolks and whites separate so the filling can be scooped cleanly.
Make the relish filling
- Mash the yolks until fine. Press and break them down until the texture looks smooth with no large lumps.
- Stir in the mayonnaise, sweet pickle relish, yellow mustard, white vinegar, salt, and black pepper. Mix until the filling looks evenly speckled and creamy.
Fill and garnish
- Spoon the filling into the egg whites. Fill each half generously so the tops look level and packed.
- Dust the tops with paprika. The visual cue is a light red-pink sprinkle across the filling.
- Chill the deviled eggs until serving. The visual cue is firm, cold eggs that hold their shape when moved.
Notes
For the smoothest filling, mash yolks while they’re still warm from cooling and keep stirring until the relish is evenly distributed. Store deviled eggs covered in the refrigerator for up to 3 days; freezing is not recommended. For a lighter option, use light mayonnaise to reduce fat while keeping the tang from the relish and vinegar.
