Ingredients

Puff pastry pinwheels
  • 1 puff pastry 1 sheet, thawed
  • 0.5 cup fig jam
  • 4 oz goat cheese crumbled
  • 0.25 cup walnuts finely chopped
  • 1 tsp fresh thyme leaves
  • 1 large egg beaten with water for egg wash
  • 1 tbsp honey

Equipment

  • 1 sheet pan

Method

Preheat and prep
  1. Preheat your oven to 400F and line a baking sheet with parchment for easy release.
  2. Roll the puff pastry into a 10x12-inch rectangle, then spread the fig jam evenly to the edges.
Fill and roll
  1. Sprinkle the goat cheese, walnuts, and thyme evenly over the jam.
  2. Roll up tightly from the long side to form a log with a firm seam.
  3. Chill the log for 15 minutes to help it slice cleanly.
Slice, egg wash, and bake
  1. Slice the chilled log into 20 rounds and arrange them on the baking sheet.
  2. Brush the tops with egg wash for a golden, glossy finish.
  3. Bake at 400F for 16-18 minutes, until the pinwheels are puffed and golden.
Finish
  1. Drizzle with honey right after baking, so it melts slightly and looks glossy.
  2. Serve warm so the spiral layers stay crisp and fragrant.

Notes

For the cleanest spirals, chill the rolled log long enough to firm up before slicing—if it feels soft, extend chilling by 5-10 minutes. Store leftovers covered in the fridge up to 3 days and reheat at 350F for 6-8 minutes to refresh crispness; freezing is not recommended because puff pastry texture changes after thawing. For a dairy-free swap, use a dairy-free goat-style cheese alternative and keep the same crumbled texture for similar swirls.
