Ingredients

Baguette and olive oil
  • 1 baguette sliced 1/2 inch thick on the bias
  • 3 tbsp olive oil
Whipped feta
  • 8 oz feta crumbled
  • 4 oz cream cheese softened
  • 2 tbsp greek yogurt
  • 1 tsp lemon zest
Toppings
  • 1 cup hot honey use 1/4 cup
  • 0.25 red pepper flakes for garnish
  • 1 fresh thyme for garnish

Equipment

  • 1 sheet pan
  • 1 food processor

Method

Toast the crostini
  1. Preheat the oven to 400F. Brush the baguette slices with olive oil and arrange them on a baking sheet.
  2. Bake for 6-8 minutes at 400F until golden and crisp, then remove the sheet pan to cool slightly.
Whip the feta
  1. Blend the feta, cream cheese, Greek yogurt, and lemon zest in a food processor until fluffy and smooth, stopping to scrape down as needed for an even texture.
Assemble and finish
  1. Spread a thick layer of whipped feta on each warm crostini so the topping clings without sliding.
  2. Drizzle with hot honey, then top with red pepper flakes and fresh thyme for a glossy finish and visible flecks.

Notes

Pro tip: use softened cream cheese so the whipped feta turns fully smooth and airy in the processor. Store leftovers in the fridge up to 2 days; re-crisp crostini in a 375F oven for a few minutes before topping. Freezing whipped feta is not recommended for best texture. For a lighter option, swap the cream cheese for an equal amount of lower-fat cream cheese or use more Greek yogurt to keep it tangy while reducing richness.
