Method
Prep and preheat
- Preheat the oven to 350°F, then grease a 9x13 baking pan so the brownies lift out easily.
Mix the batter
- Combine the brownie mix, pumpkin puree, pumpkin pie spice, and cinnamon in a mixing bowl and stir until completely smooth.
- Stir until the batter looks very thick—this is correct, and you should not add eggs or oil from the box instructions.
- Fold in the dark chocolate chips if using so they distribute throughout the thick batter.
Bake
- Spread the batter evenly in the prepared pan; because it is dense, press and level it with a spatula.
- Bake at 350°F for 23–26 minutes, until a toothpick comes out clean.
Cool and finish
- Cool completely, then dust the top with powdered sugar.
- Cut into 16 bars and serve; each bar is approximately 90–100 calories depending on the brownie mix used.
Notes
Pro tip: don’t loosen the batter—its thick consistency is what helps these bake up dense and fudgy without eggs or oil. Store bars in an airtight container in the fridge for up to 4 days; freeze for up to 2 months (thaw overnight in the refrigerator) if you want to make ahead. For a dairy-free option, choose a brownie mix and chips that are labeled dairy-free.
