Ingredients

Eggs
  • 12 large eggs
Bacon
  • 8 slices bacon
Deviled yolk filling
  • 0.5 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 0.25 tsp smoked paprika
  • 0.125 tsp black pepper
Garnish
  • 1 Fresh chives for garnish

Method

Boil, chill, and prep the eggs
  1. Place eggs in a pot, cover with cold water, and bring to a boil; cover, remove from heat, and let stand 12 minutes. Visual cue: the surface of the water should reach a full boil before you remove the pot from the burner.
  2. Chill the eggs in an ice bath for 10 minutes, then peel and halve lengthwise. Visual cue: the shells should come off cleanly after cooling.
Cook bacon and make the filling
  1. Cook bacon until crisp, then finely crumble 4 slices and break the rest into 24 shards. Visual cue: the bacon pieces should look deeply golden with crisp edges.
  2. Mash yolks with mayonnaise, Dijon, apple cider vinegar, smoked paprika, pepper, and crumbled bacon. Visual cue: the mixture should be creamy and evenly speckled with bacon.
Fill and garnish
  1. Pipe the filling into the egg whites. Visual cue: the filling should form a smooth, mounded layer in each egg half.
  2. Stand a bacon shard in each egg and sprinkle with chives. Visual cue: the bacon shard should be upright and the chives should look freshly scattered on top.

Notes

For the cleanest filling, cool the boiled eggs fully before peeling so the yolk doesn’t smear into the whites. Refrigerate assembled deviled eggs in a sealed container for up to 3 days; do not freeze (the texture of the eggs and mayo can break). Dietary swap: use light mayonnaise to reduce calories while keeping the creamy consistency.
