Ingredients

Little smokies
  • 14 oz little smokies
Bacon
  • 1 lb thin-cut bacon Slice cut into thirds to wrap each smokie.
Brown sugar coating
  • 1 cup brown sugar Packed.
  • 0.25 tsp cayenne pepper
Butter glaze
  • 2 tbsp butter Melted.

Equipment

  • 1 sheet pan

Method

Prep the pan
  1. Preheat the oven to 350F. Line a baking sheet with foil and parchment for easy cleanup.
Wrap the smokies
  1. Wrap each smokie with a piece of thin-cut bacon and secure it with a toothpick. Keep the bacon snug so it crisps evenly.
Coat in spiced brown sugar
  1. Mix the packed brown sugar with cayenne pepper in a bowl. Roll each wrapped smokie in the mixture to coat all sides.
Bake
  1. Arrange the coated smokies on the lined pan and drizzle with melted butter. Sprinkle any remaining sugar over the top.
Finish and serve
  1. Bake for 30-35 minutes at 350F until the bacon is crisp and the sugar is bubbly and caramelized. Cool for 5 minutes so the glaze sets, then serve warm.

Notes

For the crispest bacon, use thin-cut bacon and avoid overcrowding on the sheet pan so the sugar can bubble and caramelize. Store leftovers in the refrigerator up to 3 days; reheat on a sheet pan at 350F until warmed through. Freezing isn’t recommended because the caramel coating may soften when thawed. For a lower-sodium option, choose reduced-sodium little smokies and low-sodium bacon while keeping the same bake time.
