Cook the cranberry base
- In a saucepan, combine granulated sugar, brown sugar, orange juice, water, cinnamon stick, and salt, then bring to a boil while stirring until the sugar dissolves. Visual cue: the mixture should look clear and glossy before adding cranberries.
- Add fresh cranberries to the boiling liquid and return to a boil, then keep the heat high briefly to re-start the simmer. Visual cue: you should see bubbles around the cranberries immediately.
- Reduce heat and simmer for 10-12 minutes, stirring often, until most berries burst and the sauce thickens. Temperature cue: keep it at a gentle simmer (not a hard boil); visual cue: the sauce will look darker and slightly coats the back of a spoon.
Finish and chill
- Remove from heat and stir in orange zest and vanilla extract, then discard the cinnamon stick. Visual cue: the sauce should brighten slightly and smell fragrant.
- Cool to room temperature, then chill so the cranberry sauce thickens further as it cools. Visual cue: it will set into a spoonable, gel-like consistency in the fridge.
Notes
Pro tip: stir often during the 10–12 minute simmer so the sugar doesn’t catch at the bottom. Store covered in the refrigerator for up to 7 days; freeze up to 2 months (thaw overnight in the fridge) for make-ahead holiday prep. For a lower-sugar option, swap half the granulated sugar for an equal amount of a sugar-free sweetener blend that measures like sugar, and simmer as directed.
