Preheat and prepare the baking dish
- Preheat the oven to 375°F and grease an 8x8 or 9x9 baking dish.
- Blend cottage cheese, eggs, honey, vanilla, oat flour, baking powder, cinnamon, and salt until smooth, scraping as needed for an even custard.
Assemble and bake
- Pour the batter into the prepared dish and scatter blueberries evenly over the top, pressing some in gently so they bake into the custard.
- Bake for 30–35 minutes at 375°F until the center is fully set and the top is golden with a slightly domed look.
Rest, finish, and serve
- Rest the bake for 10 minutes so it finishes setting for clean slices.
- Dust with powdered sugar, slice, and serve with maple syrup.
Notes
Pro tip: press a few blueberries slightly below the surface so you get juicy bursts in every bite. Store leftovers in the fridge up to 4 days in an airtight container; reheat individual portions in the microwave. Freezing is not recommended due to texture changes from the custard.
