Build the soup base
- Combine bone-in chicken thighs, carrots, celery, onion, garlic, fresh ginger, chicken broth, turmeric, dried thyme, black pepper, and cayenne in a large pot.
- Bring to a boil over high heat, then reduce to a simmer and cook 30 minutes until the chicken is very tender.
Shred and return chicken
- Remove the chicken from the pot, shred the meat, and discard bones and skin, then return the shredded chicken to the pot.
Cook noodles and wilt greens
- Add egg noodles and simmer 6-8 minutes until tender, stirring occasionally to prevent sticking.
- Stir in kale or spinach and cook 3 minutes until wilted.
Season and serve
- Stir in lemon juice, apple cider vinegar, and honey, then season with salt to taste.
- Serve hot with extra lemon wedges and fresh parsley for garnish.
Notes
Pro tip: For the most flavorful broth, keep the pot at a steady simmer (not a hard boil) while the chicken becomes very tender. Refrigerate in an airtight container up to 4 days; reheat gently to avoid overcooking the noodles. Freezing is not recommended because egg noodles can soften too much after thawing. Dietary swap: use low-sodium chicken broth and skip the added cayenne or honey if you prefer less sodium or less sweetness.
