Ingredients

Chicken and soup base
  • 2 lb bone-in chicken thighs Keep bones and skin on for richer broth; remove after simmering.
  • 4 carrots Slice for quick tender cooking in the broth.
  • 4 celery Slice for balanced texture.
  • 1 onion Dice finely so it melts into the broth.
  • 8 cloves garlic Minced.
  • 2 tbsp fresh ginger Grated.
  • 8 cup chicken broth Low-sodium if you prefer; adjust salt at the end.
  • 1 tsp turmeric Adds color and warmth.
  • 1 tsp dried thyme Stir in with the base for even flavor.
  • 0.25 tsp black pepper Freshly ground if available.
  • 0.25 tsp cayenne Adds gentle heat—reduce or omit if sensitive.
Finishing ingredients
  • 2 cup kale or spinach Chopped; stir in at the end so it wilts but stays vibrant.
  • 1 tbsp lemon juice Freshly squeezed.
  • 1 tbsp apple cider vinegar For tang and depth.
  • 1 tbsp honey Balances acidity; use to taste if you like it less sweet.
  • 8 oz egg noodles Cook 6-8 minutes until tender in the soup.
  • 1 fresh parsley and lemon for serving Serve with extra lemon wedges and chopped parsley.
  • Salt to taste Add after finishing with lemon juice, vinegar, and honey.

Equipment

  • 1 Dutch oven

Method

Build the soup base
  1. Combine bone-in chicken thighs, carrots, celery, onion, garlic, fresh ginger, chicken broth, turmeric, dried thyme, black pepper, and cayenne in a large pot.
  2. Bring to a boil over high heat, then reduce to a simmer and cook 30 minutes until the chicken is very tender.
Shred and return chicken
  1. Remove the chicken from the pot, shred the meat, and discard bones and skin, then return the shredded chicken to the pot.
Cook noodles and wilt greens
  1. Add egg noodles and simmer 6-8 minutes until tender, stirring occasionally to prevent sticking.
  2. Stir in kale or spinach and cook 3 minutes until wilted.
Season and serve
  1. Stir in lemon juice, apple cider vinegar, and honey, then season with salt to taste.
  2. Serve hot with extra lemon wedges and fresh parsley for garnish.

Notes

Pro tip: For the most flavorful broth, keep the pot at a steady simmer (not a hard boil) while the chicken becomes very tender. Refrigerate in an airtight container up to 4 days; reheat gently to avoid overcooking the noodles. Freezing is not recommended because egg noodles can soften too much after thawing. Dietary swap: use low-sodium chicken broth and skip the added cayenne or honey if you prefer less sodium or less sweetness.
