Method
Make and shape the cheese log
- Beat the goat cheese and cream cheese until smooth, then shape into a log with clean edges. The mixture should look uniform and creamy without lumps.
- Wrap the log tightly in plastic wrap and chill for 30 minutes until firm. It should hold its shape when you unwrap it.
Coat and assemble
- Combine the bacon, pecans, cranberries, and chives on a plate. Spread it out so you can roll the log evenly.
- Roll the chilled log in the mixture, pressing to coat on all sides. Make sure every inch is covered with a crunchy layer.
- Transfer the coated log to a serving board and drizzle with honey. Add a final thin zigzag so it glistens on the nuts and bacon.
- Serve the log with crackers. Cut one end to reveal the creamy white center.
Notes
Pro tip: toast the pecans until fragrant and dry them briefly so the coating stays crisp on the outside. Store the log covered in the refrigerator for up to 3 days; it’s best to coat and drizzle with honey right before serving. Freeze not recommended because the cranberry and nut coating can lose texture after thawing. For a lighter option, use reduced-fat cream cheese and keep the goat cheese as the base for a similar creamy texture.
