Prep and layer
- Grease the slow cooker insert well so the casserole releases cleanly after cooking.
- Layer the thawed hash browns in the bottom of the slow cooker, then scatter the sliced sausage rounds on top.
Make the cheesy egg custard
- Whisk the eggs, milk, garlic powder, onion powder, salt, and black pepper until evenly combined.
- Stir in 1.5 cups of the shredded cheddar so the custard turns thick and creamy, then pour it over the sausage and potato layers.
- Top with the remaining cheddar for a melted, golden finish.
Cook
- Cook on LOW for 6 hours, or on HIGH for 3–4 hours, until the eggs are fully set and the top looks golden and cheesy.
Serve
- Garnish with fresh chives and serve directly from the crockpot.
Notes
For the cleanest slice, let the casserole rest in the turned-off slow cooker for 10 minutes before serving. Store leftovers covered in the refrigerator for up to 4 days; reheat portions in the microwave until hot throughout. Freezing is not recommended because the potatoes and custard can turn watery when thawed. For a lighter option, use reduced-fat cheddar and 2% milk (texture stays close, flavor is slightly less rich).
