Prep
- Preheat oven to 350°F and grease a 9x5 loaf pan so the batter releases cleanly after baking.
Make the batter
- Whisk mashed very ripe bananas, eggs, melted coconut oil, vanilla extract, and unsweetened applesauce until smooth and combined.
- Fold in all-purpose or whole wheat flour, baking soda, cinnamon, and salt until just combined, keeping the batter from overmixing.
- Fold in sugar-free chocolate chips or chopped nuts if using, then stop mixing once they are evenly distributed.
Bake
- Pour the batter into the prepared pan and smooth the top so it bakes evenly.
- Bake at 350°F for 60–70 minutes until the top is deeply golden and a toothpick inserted in the center comes out clean.
Cool and slice
- Cool completely before slicing, since the bread firms up significantly as it cools.
Notes
For the sweetest loaf, use very ripe bananas with lots of brown spots and mash thoroughly. Store covered in the refrigerator up to 4 days; freeze slices in an airtight container up to 2 months. For a nut-free option, swap the optional mix-ins for nothing (use only the banana base) to keep it simple and clean eating-friendly.
