Equipment

Method

Build the soup
  1. Combine chicken, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, cayenne pepper, and dried thyme in a large pot.
  2. Bring to a boil over high heat, then reduce to a steady simmer and cook 25-30 minutes, until the chicken is cooked through and tender.
Shred and cook noodles
  1. Remove the chicken from the pot, shred it, and return the shredded chicken to the broth.
  2. Add egg noodles and simmer 6-8 minutes, stirring occasionally, until the noodles are tender.
Finish and serve
  1. Stir in honey, lemon juice, and apple cider vinegar and season with salt and pepper to taste.
  2. Serve hot with fresh parsley and extra lemon wedges for squeezing over the top.

Notes

For deeper flavor, simmer uncovered so the broth stays aromatic, and skim any foam if you see it near the boil. Store leftovers in an airtight container in the refrigerator up to 3 days; noodles may absorb more broth, so loosen with a splash of chicken broth when reheating. Freezing is not recommended because egg noodles can turn soft. Dietary swap: use gluten-free egg noodles to keep the same comforting texture.
