Ingredients

Honey Apricot Goat Cheese Spread
  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 2 tbsp milk
  • 1 cup apricot preserves use 1/3 cup
  • 2 tbsp honey
  • 1 cup dried apricots use 1/4 cup, finely chopped
  • 2 tbsp pistachios chopped
  • 1 tsp fresh thyme leaves
  • 0.125 flaky sea salt pinch
  • 1 crackers or crostini for serving

Equipment

  • 1 stand mixer

Method

Make the whipped goat cheese
  1. Beat the goat cheese, cream cheese, and milk in a stand mixer until light and smooth, scraping the bowl as needed.
  2. Spoon the whipped mixture into a shallow serving bowl and swirl in the center to make a clear spot for the topping.
Warm the apricot-honey topping
  1. Warm the apricot preserves with honey for 20-30 seconds, then stir until loose and pourable.
  2. Spoon the warm apricot-honey over the goat cheese swirl.
Finish and serve
  1. Top with finely chopped dried apricots, chopped pistachios, fresh thyme leaves, and a pinch of flaky sea salt for texture and color.
  2. Serve immediately with crackers or crostini for scooping and spreading.

Notes

For the smoothest spread, make sure the goat cheese and cream cheese are fully softened before beating. Store leftovers covered in the refrigerator up to 3 days; for best texture, let it sit at room temperature for 10 minutes before serving. Freezing is not recommended because the dairy can become grainy. If you want it dairy-reduced, use a lactose-free cream cheese and lactose-free goat cheese substitute to keep the flavor similar.
